Pumpkin Banana Bread
Temp: 350 deg F Time: 35-40 minutes
2/3 cup coconut flour
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1 Tbsp pumpkin pie spice*
1/2 cup pumpkin puree
2-3 ripe bananas
1/4 cup honey
1 tsp vanilla
4 eggs
1/2 cup raisins
(optional)
Mix dry ingredients
together, add wet ingredients and stir just to moisten. Pour into a loaf pan
and bake.

3 Tbsp cinnamon
2 tsp ginger
2 tsp nutmeg
1-1/2 tsp allspice

Horse Cookies
Oven temp: 350 deg F Time: 15 minutes
1 cup rolled oats
1 cup flour
1 cup shredded carrots
1 tsp salt
1 Tbsp sugar
2 Tbsp oil
1/4 cup water
1/2 cup molasses
Mix the ingredients in a large bowl. Roll the mixture in plastic wrap in a roll about as big as a quarter and partially freeze. Cut in quarter inch slices and place on a cookie sheet. Bake until golden brown. If not hardened, lower the temperature to 250 deg F and turn the cookies a few times.

Doggie Cookies

1-1/2 cup whole wheat flour
1 cup white flour
1 cup skim milk powder
1/3 cup melted bacon drippings or beef fat
1 large egg, fork beaten
1 cup cold water
Combine flours and milk powder in a large mixing bowl and drizzle with beef or bacon fat. Add the egg and cold water.
Mix to form dough. Turn out onto a floured surface and roll dough to a 1/2" thickness. Cut dough with cutters of your choice, place on a greased baking sheet and bake.

1/3 cup margarine or butter
1/2 cup powdered milk
1/2 tsp salt (optional)
1 Tbsp minced garlic
1 Tbsp parsley flakes
1 egg, beaten
3 cups whole wheat flour
In a large bowl, combine water or broth with margarine. Add powdered milk, salt, garlic, parsley and egg. Stir in 1/2 cup increments, mixing well after each addition.
Knead the dough for 3-4 minutes and roll out to 1/2" thickness. Cut into desired shapes, place on greased cookie sheet and bake.
Remove from oven and let biscuits cool until dry and hard. Can even leave them in the oven after turning it off.

1/2 cup wheat germ
1/2 cup cornmeal
14-1/2 oz beef or chicken broth (or make your own)
1/2 cup non-fat dry milk
1 tsp salt
1 pkg dry yeast
1/4 cup warm water
1 Tbsp milk
1 beaten egg
Dissolve yeast in 1/4 cup warm water and let proof. Warm the broth to about 110 deg F. In large bowl, mix both flours, oats, wheat germ, cornmeal, dry milk and salt. Stir in broth and yeast mixture. Knead by hand for at least 3 minutes. Don't skimp on the kneading time. Roll into a 1/2" thick sheet and cut with cookie cutter or roll into log shape and sliced to desired size. Mix the egg and milk and brush on before baking. Bake for about 40 minutes (a little longer if they're big). Turn off oven and leave in overnight. The longer you leave them in the warm oven, the crunchier they get.

Mix the cornmeal and flour together in a medium size bowl. Add the oil and water to the dry mixture. Mix well. if the dough feels too dry, you may need to add a few drops of water to loosen it. If it's too wet, add more flour, one teaspoon at a time, until the dough is soft but not sticky. Be careful not to over mix the dough or it will be tough.
Roll out dough to about 1/4" thickness on a flour dusted surface. Cut out shapes with cookie cutters or a drinking glass. Bake for 30-35 minutes or until the cookies are a light, golden brown. Cool, then store in an airtight container.

Combine everything except water. Whisk in food processor until mixture forms a ball. Roll it into 1/2" thickness and cut into shapes. Bake on ungreased bookie sheets for about 10 minutes (depending on size of shapes). Cool and store in fridge.

In a large bowl, combine flour, sugar, pie spice, baking soda, baking powder and salt. In another bowl, combine the cranberry sauce, pumpkin, pecans, oil and eggs; stir into dry ingredients and mix well. Pour into two greased loaf pans. Bake until an toothpick inserted in the centre comes out clean. Cool for 10 minutes, remove from pans to a wire rack to cool completely. Combine glaze ingredients and drizzle over loaves.

1/2 cup hulled sunflower seeds
1/3 cup water
1 cup honey

1 tsp vanilla
1 cup raisins
In a large bowl, combine oatmeal, oat bran, wheat germ, flax and sunflower seeds, mix well. In a pot mix water, honey, coconut oil and peanut butter, warming just till it is pourable. Add vanilla and pour over dry ingredients. Spread on two cookie sheets and cook in low oven, stirring often. When it is almost cooked (cereal will clump), add raisins. Cook another 5 minutes (about 30 minutes at 250 deg F in all). Let cool completely before storing in airtight containers.

Root Beer Float Cake

1-1/4 cups Root Beer
2 eggs

In a mixing bowl, combine the first 4
ingredients. Beat on low speed for 30
seconds, then beat on high for 2 minutes.
Pour into a greased 9 x 13 pan.
Bake until a toothpick inserted comes out clean. Cool completely on wire rack.

In a mixing bowl, beat frosting
ingredients until stiff peaks form.
Frost cake. Chill.

Oven Temp: 400oF Baking Time: 15-20 minutes
2 eggs
1/2 cup sugar
1 cup pumpkin
1/2 cup melted butter or 3/4 cup vegetable oil

1 cup chocolate chips
Mix together in order given. Fill greased muffin tins. Bake until muffins test done. Cool in pan for 10 minutes before removing to wire rack.

Cool Salmon Tacos
14 oz. can salmon, drained
16 oz. can black beans, rinsed and drained
1 cup salsa verde (green salsa)
1-1/2 cups diced cheese
2 avocados, peeled and diced
1 cup grape tomatoes
8 taco shells
taco toppings (lettuce, tomatoes, sour cream, green onion)
Combine all ingredients except taco shells in medium bowl. Heat taco shells as directed on package, if desired. Assemble salmon tacos with heated shells and taco ingredients as desired.
