Slow Cooker Beef Brisket with BBQ Sauce
This recipe makes a lot of BBQ sauce. I cut it in half and still had leftover!

Enchilada Lasagna
Cook 1-1.5 lb ground burger with chopped onion and taco seasoning.
Cook rice to make about 4 cups cooked.
Mix meat and rice with a can of tomato soup and/or salsa and beans.
Either roll them up individually or layer them in a casserole dish:
- tortilla wraps
- meat/rice mix
- cheese
- repeat!
Broil on low.

Favorite Chili For The Slow Cooker
Put the following ingredients into a slow cooker and turn on low for 8 hours:
2 lb cooked ground beef with onions and garlic
2 cans diced tomatoes
1 can red kidney beans
1 can black beans
1 green pepper, diced
1 cup frozen corn
2 Tbsp chili powder
1-1/2 tsp cumin
1 tsp salt
3/4 tsp pepper

Unstuffed Cabbage Rolls
2
lbs lean ground beef
1
large onion, diced
1
garlic clove, minced
1
small cabbage, chopped
1
cup rice
2
(14 1/2 ounce) cans diced tomatoes
1
(8 ounce) cans tomato sauce
1/2
cup water
1
teaspoon ground black pepper
1
teaspoon sea salt
In a large
skillet or dutch oven, brown the ground beef and onions. Drain.
Add the
garlic and cook an additional minute.
Add
remaining ingredients.
Bring to a
boil, cover, reduce the heat and simmer about 25 minutes or until the cabbage
is tender.

Slow Cooker Black Bean Chili
1 lb ground beef
1 medium onion, chopped
16 oz jar thick salsa
15 oz can black beans, rinsed and drained
1/2 cup chicken broth
1 medium red bell pepper, chopped
1 tsp ground cumin
2-3 tsp chili powder
1 to 1.5 tsp dried oregano
1. Brown ground beef and onion in skillet. Drain.
2. Combine all ingredients in slow cooker.
3. Cover. Cook on low 8-10 hours or high 3-6 hours.
4. When serving, add sour cream and guacamole if desired.

Mom's Meatbuns
Meatbun Dough for the bread machine:
1/2 Tbsp yeast
2-1/3 Tbsp sugar
3/4 cup water
1/2 cup mashed potatoes
1/4 cup butter or shortening
3-1/2 to 3-3/4 cups flour
1 egg
3/4 tsp salt
Filling:
Fry onions and garlic. Then take either beef broth thickened with flour and water or 1 can gravy (284 mL) and add to ground cooked roast or cooked ground meat. Mix together.
To form buns:
Pinch off balls of dough about the size of a small egg.
Flatten dough in the palm of your hand into about a 3-inch circle.
Place a spoonful of filling on the centre.
Bring the edges of the dough up and around the filling and pinch together tightly to seal edges.
Place pinched side down on a greased baking sheet.
Cover and allow to rise in a warm place.
Bake at 375 deg F for about 20 minutes or until golden.

Beans, Rice and Lentil Chili
1 lb. lean ground beef
1/2 large onion, chopped
1-19 oz. can diced tomatoes
1-7.5 oz can tomato sauce
1 cup water
1 cup uncooked whole grain brown rice
1 jar salsa
1-19 oz. can mixed beans (red kidney & Romano beans, chickpeas and black-eyed peas)
1 cup cooked lentils
1-2 tsp chili powder
1/4 tsp fresh ground pepper
1/2 tsp crushed red pepper
Sort the lentils to remove dirt and stones, rinse and place in a saucepan. Cover with water. Simmer on medium heat for 30-40 minutes. Lentils will double to triple in volume. Drain.
Brown ground beef. Add onion and cooke and stir until onion is clear and beef is cooked. Add tomatoes, tomato sauce, water and rice. Cover and cook for 15 minutes. Add salsa and mixed beans. Cook for 10 minutes. Add cooked lentils and spices. Heat and serve.

Mac 'N Cheeseburger Casserole
Oven Temp: 400 deg F (200 deg C)
1 lb extra lean ground beef
2 cups sliced mushrooms
1 cup chopped red and yellow peppers
1/2 cup chopped onions
1/2 cup chopped celery
1 can (14 oz) stewed tomatoes, undrained
1 can (284 mL) condensed cream of mushroom soup
2 cups uncooked whole wheat elbow pasta
2 tbsp Worcestershire sauce
1 tbsp chili powder
1/4 cup shredded cheddar cheese
Cook beef until browned at medium-high heat in large non-stick skillet. Add mushrooms, peppers, onions and celery. Cook and stir for 3 minutes.
Place mixture in a shallow (2 L) baking dish. Stir in all other ingredients, except cheese.
Bake, covered until pasta is tender, about 50 minutes.
Stir, then sprinkle with cheese and let stand 5 minutes before serving.

Hawaiian Beef Stir-Fry
1/2 tsp cornstarch
2 Tbsp Worchestershire Sauce, divided
1 lb beef stir fry meat or top sirloin grilling steak, cut into 3/4” cubes
1/4cup ketchup
1 Tbsp sugar
1 can (398 mL) pineapple chunks
1 green or red sweet pepper, cut into 3/4” pieces
1-2 cloves garlic, minced or 1/2 tsp garlic powder
In medium bowl, dissolve cornstarch and 1 Tbsp Worchestershire Sauce. Add beef and toss to coat. In small bowl mix ketchup, sugar and 1 Tbsp each Worchestershire Sauce and juice from pineapple for sauce; drain pineapple. Brown beef in a large oiled skillet over medium-high heat. Remove and set aside. In same skillet heat 2 Tbsp water over medium-high heat; add peppers and garlic. Cook and stir 3-4 minutes or until water evaporates and peppers are crisp-tender. Reduce heat and stir in sauce mixture, pineapple and beef along with any accumulated juices. Heat through and serve over hot rice

1 green pepper
1 jalepeno pepper
1 can 398 mL diced tomatoes
1 can 540 mL kidney beans
1 can black beans, optional
1/4 chopped fresh cilantro
1 Tbsp ground cumin
1 tsp chili powder
1/2 tsp salt
1/2 tsp pepper
Cook ground beef until no pink remains and onions are soft. Transfer to a slow cooker and add remaining ingredients. Cook on low 6-8 hours.

Pulled Beef For The Slow Cooker
Combine the following ingredients together in your slow cooker:
1 Small Onion, Diced
1/2 cup Chopped Celery
1/2 cup Water
1/2 cup Ketchup or Chili Sauce
1/4 cup Barbecue Sauce
2 Tbsp Vinegar
2 Tbsp Brown Sugar
1/2 Tbsp Worchestershire Sauce
1 tsp Minced Garlic
1/2 tsp Chili Powder
1/2 tsp Dry Mustard
1/2 tsp Pepper
Add 1 frozen roast. Coat it in the sauce. Cook on low for 8 hours. Remove roast and place on a cutting board. Pull the meat from the roast with a fork. Add the pulled meat back to the sauce. Stir. Enjoy as is or on a bun with cheese.

Beef Stew For The Slow Cooker
2 lb. beef round steak, cubed
Mix together in a small bowl:

1/2 tsp salt
1/2 tsp pepper
1 tsp paprika
Sprinkle the flour mixture over the meat and toss to coat.
Add:
1-1/2 cups beef broth
1/2 tsp worcestershire sauce
1 tsp minced garlic
3 medium potatoes, cubed
4 carrots, sliced
1/2 onion, chopped
1 stalk of celery, diced
Mix it all together. Cook for 4-6 hours on low.

Meatloaf Stew For The Slow Cooker
1/4 cup water
5-6 medium potatoes, peeled and cut bite size
6 carrots, peeled and cut bite size
Salt, sprinkle
Pepper, sprinkle
1 large egg, fork-beaten
1/3 cup ketchup
2 tsp beef bouillon powder
1/3 cup onion, finely chopped
1/4 tsp ground thyme
1/4 cup water
1/3 cup soda cracker crumbs
1 tsp salt
1/4 tsp pepper
1-1/2 lb ground beef
Pour first amount of water into 6 quart slow cooker. Add potato and carrot. Sprinkle with first amounts of salt and pepper.
Combine next 9 ingredients in bowl. Mix well.
Add ground beef. Mix well. Place over vegetables. Cover. Cook on low for 8-10 hours or on high for 4-5 hours.

Hamburger Soup For The Slow Cooker
In a fry pan, cook together:
1 lb of ground beef
1/2 large onion, chopped
1 Tbsp minced garlic
Add the cooked meat to slow cooker, plus the following ingredients:
1 large carrot, grated coarse or fine
1 or 2 stalks of celery with or without leaves, chopped
2 Tbsp barley or rice
1 cup beef consommé
3 cups water
10 oz can of condensed tomato soup
Salt and pepper to taste
Pinch of thyme
1 bay leaf
Cook on low for 8 hours.

3 lb beef short ribs, trimmed of fat
1 cup barbecue sauce
2 Tbsp molasses (not blackstrap)
2 Tbsp white vinegar
1 tsp salt
1/2 tsp pepper
1 Tbsp soy sauce (optional)
1/2 cup chopped onion
Place ribs in slow cooker (or if you wish, brown them on all sides in 2 Tbsp cooking oil in frying pan first).
Mix next six ingredients well in a bowl.
Stir in onion. Pour over short ribs. Cover. Cook on low for 8-10 hours or on high for 4-5 hours.

1/4 cup fine dry bread crumbs
1 lb ground beef
1/2 cup grated cheddar cheese
In a large bowl, whisk egg with salsa and seasonings. Stir in bread crumbs. Add meat and work with a fork until blended. Work in cheese. Shape into 4 burgers, about 3/4 inch thick. Then barbecue, turning once, about 8 minutes a side for well done burgers.

Baked Hamburger
Temp: 350 deg F Time: 1 hour
Hamburgers:
1 lb ground beef
1 small onion
1/2 cup bread crumbs
1/4 cup milk
salt & pepper to taste
Sauce:
3/4 cup water
1/4 cup sugar
1 tsp vinegar
1/4 cup ketchup
1 tsp mustard
3/4 tsp salt
Shape patties. Place in shallow pan and pour sauce on top. Bake.
