Ouma's Vereniki

1/2 cup milk
1 egg or 1 egg whites
1/2 tsp salt
Add enough flour to make dough to roll - about 2 cups

Mix ingredients together.
Roll out thin and cut into squares.
Add oil or butter to a pot of boiling water.
Put squares of dough into boiling water for 5 minutes.
Top with saskatoons and white sauce.

White Moos

Heat 3.5 cups milk to very hot, just under boil (microwave 7 minutes)

Put into a small bowl:
1/8 cup sugar
2 heaping Tbsp flour
Stir in enough milk to make a runny paste

Whisk into hot milk slowly.

Put back in the microwave for a minute at a time, stirring in between, until it boils.

Cool for a bit, then add your favorite fruit.

Plumi Moos

Add 10 cups water and 3 cups cut up mixed dried fruit (prunes, apricots, apples, raisins) to a slow cooker. Turn on low for 4 hours.

Make a paste of 1/3 cup sugar, 3 heaping Tbsp cornstarch and a little evaporated milk (add more milk if you like it creamier) - mix well. Slowly stir in to fruit/water mixture. Bring moos to a boil, then remove from heat. Cool.

Green Bean Soup (Schaubel Zup)

Cooked farmers sausage, ham or back bacon, chopped in to bite size pieces
3 cups green beans, cut in to bite size pieces
4 medium potatoes, cut in to bite size pieces
2 cups carrots, sliced
1 medium onion, minced
1 stalk celery, chopped
1 Tbsp summer savory
1 Tbsp parsley
1 bay leaf
1/2 tsp salt
1/2 tsp pepper

Optional: Add 2 cups shredded zucchini

Put all ingredients in to a slow cooker and simmer all day.

Bubbat (Mennonite Chicken Dressing)

1 cup flour
1.5 tsp baking powder
1/2 tsp salt
2 Tbsp shortening, melted
1 egg
1/3 cup milk
1 cup raisins
2 Tbsp sugar, if desired

Mix dry ingredients; add beaten egg, shortening and milk. Mix well and add raisins. Bake in 350 deg F oven for 20 minutes or use as a filling in chicken or turkey.

M's Rollkuchen

4 eggs
3/4 cup sour cream
3/4 cup whipping cream (I have used 18% cream as well and it works)
4 cups flour
2 tsp sugar (2 Tbsp if you want them sweeter)
4 tsp baking powder
1 tsp salt

Beat eggs, add sour cream and whipping cream. Mix well. Add dry ingredients slowly, mix well. Let dough stand for 1 hour. Roll out dough very thin, cut in either strips or squares. Fry in hot oil.

Wurst Bubbat

Oven Temp: 350 deg F         Time: 45 minutes

1.5 cups milk - scald it, cool to lukewarm and add 1 cup lukewarm water

Stir together:
1 Tbsp sugar
1 beaten egg
1 tsp salt
1 cup flour
1 Tbsp yeast
2.5 - 3 cups flour

Makes soft dough that can barely be stirred. Pour dough into 9 x 12 greased pan. Press pieces of sausage into dough. Let dough rise for a half hour or longer. Bake. Sprinkle with cheese and broil.

Fruit Platz

Temp: 350°F  Time: 45 minutes

1/2 cup sugar
1/2 cup softened butter or margarine
1 egg
1/4 cup milk
1 tsp vanilla
1 cup flour
1 tsp baking powder
Fresh or frozen fruit, one kind or mixture if preferred

Mix sugar and butter, add egg, milk and vanilla. Add dry ingredients. Spread dough in a greased 9 x 13 pan. Put fruit on top of dough. Spread crumb mixture over fruit and bake.

Crumb mixture:
1 cup flour
1 cup sugar (I use half this amount)
1/4 cup hard butter or margarine

Mom's Fruit Platz (Coffee Cake)

Base:
1-1/2 cups all-purpose flour
1 Tbsp baking powder
1 tsp sugar
1/2 cup butter
3/4 cup (approx) light cream or whole milk

Spread in a 9 x 9 pan.

Spread 4 cups fruit on top of the base, then sprinkle with crumbs (ruebel).

Ruebel:
1 cup sugar
1/2 cup flour
3 Tbsp butter
2 to 2-1/2 Tbsp cream

Rub in the butter until it makes crumbs. Sprinkle over top the fruit.
Bake at 350 deg F for 30-45 minutes.

Mom's Meatbuns

Meatbun Dough for the bread machine:

1/2 Tbsp yeast
2-1/3 Tbsp sugar
3/4 cup water
1/2 cup mashed potatoes
1/4 cup butter or shortening
3-1/2 to 3-3/4 cups flour
1 egg
3/4 tsp salt

Filling:
Fry onions and garlic. Then take either beef broth thickened with flour and water or 1 can gravy (284 mL) and add to ground cooked roast or cooked ground meat. Mix together.

To form buns:
Pinch off balls of dough about the size of a small egg.
Flatten dough in the palm of your hand into about a 3-inch circle.
Place a spoonful of filling on the centre.
Bring the edges of the dough up and around the filling and pinch together tightly to seal edges.
Place pinched side down on a greased baking sheet.
Cover and allow to rise in a warm place.
Bake at 375 deg F for about 20 minutes or until golden.

New Years Cookies

Warm up 2 cups milk and put in a large bowl.

Add:
1/2 tsp salt
3 Tbsp sugar
1/2 cup water
2 eggs

Mix.

Add:
1/4 cup oil
2 cups flour
1 heaping Tbsp quick-rise yeast

Mix.

Add:
2 cups raisins
3 cups flour

Let rise until it doubles in size.
Fry in hot fat by tablespoon.

Serve with Rogers syrup, honey or icing sugar.

Portzelky (New Years Cookies)

2 Tbsp yeast in
1 cup of warm water
2 cups milk
1/2 cup potato water
1/2 cup melted butter
2 tsp salt
6 well beaten eggs
2 lb. raisins
6 cups flour

Mix in order of ingredients. Put in warm place to rise until mixture is nearly twice the size. Drop dough by tablespoons into sizzling oil - like frying fritters. Avoid breaking sponge bubbles.

Plumi Moos #2

10 cups water
2 cups dried mixed fruit
1/2 cup sugar
3 Tbsp cornstarch

Cut fruit and cook in water until very well done. Make a paste of the sugar, cornstarch and a little water or evaporated milk (enough to make 1 cup). Let come to a boil.

Mom's Plumi Moos

4 quarts water
3 cups mixed dried fruits (combination of raisins, prunes, dried apricots,pears, apples, peaches, any or all of them)
1 pkg cherry jello
1 1/2 cups sugar
4 Tbsp cornstarch
Cook fruit in water until very well done. Now mix sugar with cornstarch and enough water to make thin paste. Let it cook for a few minutes to take away the starchy taste. Then take from stove and add cherry jello.
Optional: Can add either a tin of canned cherries, added when you add the sugar and cornstarch, or include dried cherries in the dried fruit.

Ammonia Cookies

Temp: 350 deg F  Time: 10-12 minutes

Mix together:
1 cup butter or lard
1 cup milk (warmed)
3 eggs
4 tsp baking ammonia* (dissolved in 2 Tbsp hot water)
2 tsp lemon flavor

Then add:
3 cups flour
1 1/2 cups sugar
2 tsp cream of tartar
1/2 tsp baking soda

Gently blend until smooth by hand with a wooden spoon. Refrigerate overnight. Roll out dough on floured counter in small amounts and cut into desired shapes. Bake. Cookie should be white on top and light brown on bottom when done. Glaze with a little icing sugar mixed with milk.

*This is a leavening agent and can be purchased in health food stores or some pharmacies.

Pfeffernusse (Peppernuts)

Temp: 375 deg F  Time: Approx. 25 minutes

1 1/2 cups brown sugar
1/2 cup white corn syrup
1/2 cups water
1/2 cup butter
2 beaten eggs
4 cups flour
1/2 tsp cinnamon
1/2 tsp anise seed, crushed
1/2 tsp cloves
3/4 tsp baking soda (dissolved in 1 Tbsp water)

Bring brown sugar, syrup and water to a boil and cool slightly. Add remaining ingredients and mix well. Chill. Roll dough into long rolls as thick as your finger. Cut off 1/4 inch slices and bake on greased cookie sheet until nicely browned, approx. 25 minutes. Baking longer provides crunchy peppernuts; shorter makes them softer.

Paska For The Bread Machine

Add to the bread machine in this order:

2/3 cup milk
2 eggs
1/8 cup butter
1/2 cup sugar
pinch salt
3 cups flour (may have to add a bit more)
1/4 pkg yeast

If you just use the dough setting and want to bake it in the oven, bake at 350 deg F for approx. 30 minutes. Cool, then spread cream cheese icing on it and sprinkles.
