Dinner Rolls for the Bread Machine

1/4 cup milk (warm)

1/4 cup + 2 Tbsp water (warm)

1 large egg, at room temperature

1/4 cup sugar

2 Tbsp butter, cut into pieces

1/2 tsp salt

2-1/2 cups flour

2-1/4 tsp bread machine yeast

New Favorite Bread for the Bread Machine

1.5 cups water

1/3 cup skim milk powder

1-1/2 tsp salt

3 Tbsp brown sugar

2 Tbsp butter, cut into 4 pieces

2-3/4 cups all purpose flour

1 cup whole wheat flour

1-1/2 tsp bread machine yeast


Add water to pan.

Add remaining ingredients. Place a piece of butter into each corner of pan on top of dry ingredients.

Make a slight well in centre of dry ingredients and add the yeast.

Place bread pan into chamber and select the whole wheat setting.

Makes a 2 pound loaf.

Pizza Dough for the Bread Machine

3/4 cup + 1 Tbsp water
2 Tbsp vegetable oil
2 cups flour
1/2 tsp sugar
1/2 tsp salt
1-1/2 tsp bread machine/fast rise yeast

Wurst Bubbat

Oven Temp: 350 deg F         Time: 45 minutes

1.5 cups milk - scald it, cool to lukewarm and add 1 cup lukewarm water

Stir together:
1 Tbsp sugar
1 beaten egg
1 tsp salt
1 cup flour
1 Tbsp yeast
2.5 - 3 cups flour

Makes soft dough that can barely be stirred. Pour dough into 9 x 12 greased pan. Press pieces of sausage into dough. Let dough rise for a half hour or longer. Bake. Sprinkle with cheese and broil.

Rye Bread for the Bread Machine (1.5 lb loaf)

Add ingredients to bread pan in order listed:

1 large egg, at room temperature
Enough water to measure 1-1/4 cups with egg
3 Tbsp oil
3 Tbsp honey
2 Tbsp skim milk powder
1-1/4 tsp salt
1 cup rye flour
1 cup white flour
1-1/4 cup whole wheat flour
1-1/4 tsp bread machine yeast (2 tsp regular yeast)

If baking in the oven, bake at 375 deg F for 30 minutes.

Apple Cinnamon Granola Bread for the Bread Machine (2 lb loaf)

Add ingredients to bread pan in order listed:

1 cup apple juice, unsweetened            
2/3 cup applesauce, unsweetened       
2 Tbsp shortening                                   
2 Tbsp honey                                 
1 tsp salt                                         
1-1/2 cups whole wheat flour
2 cups white flour
1/2 cup granola
1 tsp cinnamon
1-1/2 tsp yeast
1/4 cup raisins

Mom's Meatbuns

Meatbun Dough for the bread machine:

1/2 Tbsp yeast
2-1/3 Tbsp sugar
3/4 cup water
1/2 cup mashed potatoes
1/4 cup butter or shortening
3-1/2 to 3-3/4 cups flour
1 egg
3/4 tsp salt

Filling:
Fry onions and garlic. Then take either beef broth thickened with flour and water or 1 can gravy (284 mL) and add to ground cooked roast or cooked ground meat. Mix together.

To form buns:
Pinch off balls of dough about the size of a small egg.
Flatten dough in the palm of your hand into about a 3-inch circle.
Place a spoonful of filling on the centre.
Bring the edges of the dough up and around the filling and pinch together tightly to seal edges.
Place pinched side down on a greased baking sheet.
Cover and allow to rise in a warm place.
Bake at 375 deg F for about 20 minutes or until golden.

Red River Cereal Bread for the Bread Machine

1-1/3 cups water
2 tbsp vegetable oil
1-1/2 cups white flour
1-1/3 cups whole wheat flour
1/2 cup Red River Cereal
1-1/4 salt
2 tbsp brown sugar
1-1/4 tsp quick rise yeast

Put ingredients in bread machine in order listed. Use whole wheat setting. Makes a 2 lb loaf

Homemade Croutons

Temp: 300 deg F  Time: 10 minutes

6 cups bread cubes
1/2 cup butter, melted
1/2 tsp garlic powder
1/2 tsp onion powder

Mix the garlic and onion powders together with the melted butter. Pour over the bread crumbs and stir well. Spread on a cookie sheet. Bake.

Bagels

Temp: 375oF             Time: 25-30 minutes

4-1/4 to 4-3/4 cups flour
2 pkg active dry yeast
1-1/2 cups warm water
3 Tbsp sugar
1 Tbsp salt
1 Tbsp sugar

In a bowl, combine 1-1/2 cups of the flour and the yeast. Combine warm water, the 3 Tbsp of sugar and the salt.  Pour over the flour mixture.  Beat at low speed of electric mixer 1/2 minute, scraping bowl.  Beat three minutes at high speed.  Stir in as much remaining flour as you can mix in with a spoon.

Turn onto a lightly floured surface.  Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (eight minutes total).  Cover, let rest 10 minutes.

Cut into 8 medium sized or 12 small portions; shape each into a smooth ball.  Punch a hole in the centre of each.  Pull gently to make a 2 inch (5 cm) hole.  Place on a greased baking sheet.  Cover; let rise 20 minutes.

Meanwhile, heat 4 L water and the 1 Tbsp sugar to boiling; reduce heat.  Cook 4 bagels at a time for 5 minutes, turning frequently.  Remove with a slotted spoon and drain.  Place on a greased baking sheet.  Bake.

Light Rye Bagels:
Prepare bagels as above, except substitute 1-1/4 cups rye flour for the first 1-1/4 cups of all-purpose flour.

Herb Bagels:
Prepare bagels as above, except add 2 tsp dried marjoram, crushed; or 1 tsp dried dillweed; or 1 tsp dried taragon, crushed or 1/2 tsp garlic powder to the flour-yeast mixture.

Onion Bagels:
Prepare bagels as above, except cook 1/2 cup finely chopped onion in 3 Tbsp butter until tender, but not brown.  Brush onion mixture over tops of bagels after first 15 minutes of baking.

Poppy Seed or Sesame Seed Bagels:
Prepare bagels as above, except before baking, brush tops with beaten egg and sprinkle with poppy seed or toasted sesame seed.

Raisin Bread for the Bread Machine

1 cup + 1 Tbsp water
2-1/2 cups all purpose flour
2 Tbsp dry milk
1-1/2 Tbsp sugar
1-1/2 tsp salt
1 tsp cinnamon
2 Tbsp butter or margarine, cut into 4 pieces
1-1/2 tsp bread machine yeast
3/4 cup raisins

Add water to bread pan.

Add flour, dry milk, sugar, salt, cinnamon to pan. Place a piece of butter into each corner of pan on top of dry ingredients.

Make a slight well in centre of dry ingredients and add the yeast.

Place bread pan into chamber and select the sweet bread setting to start.

Add the raisins when the bread machine beeps.

Makes a 1-1/2 pound loaf.

Half Whole Wheat Bread for the Bread Machine

1 cup + 1 Tbsp water
1 Tbsp honey
1-1/2 cups all purpose flour
1-1/2 cups whole wheat flour
1-1/2 tsp salt
1 Tbsp brown sugar
1-1/2 Tbsp dry milk
2 Tbsp butter or margarine, cut into 4 pieces
1-1/2 tsp bread machine yeast

Add water and honey to pan.

Add flour, whole wheat flour, salt, brown sugar and dry milk to pan. Place a piece of butter into each corner of pan on top of dry ingredients.

Make a slight well in centre of dry ingredients and add the yeast.

Place bread pan into chamber and select the whole wheat setting.

Makes a 1-1/2 pound loaf.

Grandma W's Sweet Buns

As told to me by Grandma Willms (she never had this recipe written down anywhere):

2 cups milk, scalded. Cool.
Add 1 Tbsp yeast. Let rise.
Separate 7 eggs.
Beat egg yolks and 1 cup sugar together.
Beat egg whites separately.
Add 1/2 to 3/4 cup butter.
Add all to yeast mixture.
Add 6-7 cups of flour gradually. Dough will be firm (like buns). Let rise. Knead down and let rise. Roll into circles, cut into pie wedges, add butter and roll. Let rise and bake.

Or, if you're like me and don't have time for all this, I have modified the recipe for the bread machine (you'll notice it's very similar to the paska recipe):

1 cup milk
3 eggs
1/4 cup butter
1/2 cup sugar
3 cups flour
1/2 Tbsp yeast

Roll into circles, cut into pie wedges, add butter and roll. Let rise and bake at 350 deg F for 12 minutes. When cool, add lemon flavoured icing.

Paska For The Bread Machine

Add to the bread machine in this order:

2/3 cup milk
2 eggs
1/8 cup butter
1/2 cup sugar
pinch salt
3 cups flour (may have to add a bit more)
1/4 pkg yeast

If you just use the dough setting and want to bake it in the oven, bake at 350 deg F for approx. 30 minutes. Cool, then spread cream cheese icing on it and sprinkles.
