One-Bowl Pumpkin Oatmeal Chocolate Chip Cookies

1/2 cup butter, melted
1/2 cup pumpkin puree
1/4 cup honey, softened
2 tsp vanilla
1-3/4 cup rolled oats
1-1/4 cup flour
1-1/2 tsp pumpkin pie spice
1/2 tsp baking soda
1/4 tsp salt
1 cup chocolate chips

Combine melted butter, pumpkin honey and vanilla. Whisk together. Add oats, flour pumpkin pie spice, baking soda, salt. Use a rubber spatula to fold together until just combined. Add chocolate chip and mix.

Preheat oven to 350 F. Grease cookie sheets and drop by rounded balls on to baking sheets. Flatten somewhat.

Bake 10 minutes.

Double Chocolate Drop Cookies

1/2 cup shortening
1 cup sugar
1 egg
3/4 cup sour milk (add a capful of vinegar to milk)
1/2 tsp baking soda
1/2 tsp salt
1/2 cup cocoa
1-3/4 cups flour
1 pkg chocolate chips, plain or mint

Preheat oven to 400 deg F.
Cream shortening, sugar and egg. 
Add milk, then dry ingredients. 
Blend in chocolate chips.
Drop by teaspoonful on to cookie sheet.
Bake for 8-10 minutes. Do not over cook!

Potato Chip Cookies

Temp: 350 deg F          Time: 12-14 minutes

1 cup sugar
1 cup butter
1 egg yolk
1 tsp vanilla
1-1/2 cups flour
1 cup potato chips, crushed

Mix together first 4 ingredients. Add flour and potato chips. Roll into balls; press down with a fork to flatten. Bake on a greased cookie sheet.

Trail Mix Cookies

- sunflower seeds
- slivered almonds
- peanuts
- raisins
- dried cranberries
- pumpkin seeds
- chocolate chips

Graham Cracker Chocolate Chip Cookies

Temp: 350oF      Time: 8 minutes

1/2 cup butter or margarine
1/2 cup brown sugar
2 tsp vanilla
1 egg
1-1/2 cups graham cracker crumbs
3/4 cup all purpose flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup chocolate chips

Cream the butter and sugar together until creamy. Beat in the vanilla and egg until well combined. In a medium bowl, combine the graham cracker crumbs, flour, baking soda and salt. Gradually add to the butter mixture until just combined. Stir in the chocolate chips. Drop scoops of dough onto a greased cookie sheet (Note: these cookies do not spread while baking). Bake for 8 minutes. Cookies will look slightly underdone, but should set up nicely as they cool.

Chocolate Chip Pudding Cookies

Temp: 375oF      Time: 10-12 minutes

1 cup butter or margarine
1/4 cup white sugar
1/4 cup brown sugar
1-100 g box of pudding, vanilla or chocolate
1 tsp vanilla
2 eggs
2-1/4 cups all purpose flour
1 tsp baking soda
1 cup chocolate chips

Cream the butter and sugars together well with a stand mixer. Add the pudding powder (don't actually make pudding) and the vanilla and beat until creamy. 
Add the eggs and beat until well-incorporated. Gradually add and mix in the flour and baking soda. Stir in chocolate chips. Drop scoops of dough onto greased cookie sheets and bake for 10-12 minutes.

No Bake Chocolate Drop Cookies

Boil 4-5 minutes:
2 cups sugar
1/2 cup butter or margarine
1/2 cup milk
1/4 cup cocoa

Then add:
3 cups oatmeal
1 cup coconut

Drop on wax paper. Cool.

Pumpkin/Zucchini Cookies

Temp: 375oF      Time: 8-10 minutes

1 cup sugar
½ cup shortening
1 cup zuchinni or pumpkin
2 cups flour
1 tsp baking soda
1 tsp baking powder
½ tsp cinnamon
1/8 tsp salt
1 tsp vanilla
1 cup chocolate chips, nuts or raisins

Cream sugar & shortening together well.  Add zuchinni or pumpkin.  Sift flour, baking soda, baking powder, salt and cinnamon together and blend in.  Fold in vanilla & chocolate chips, nuts or raisins.  Drop by teaspoon onto lightly greased pan.  Bake.  Makes 3½-4 dozen cookies.
