Apple Pecan Carrot Cake

Oven temp: 350 F

500 mL flour
10 mL   cinnamon
7 mL     baking soda
1 mL     nutmeg
2 mL     cloves
2 mL     salt
125 mL butter or margarine
250 mL white sugar
250 mL brown sugar
4          eggs
125 mL oil
450 mL shredded carrots
500 mL chopped apples
250 mL chopped pecans
125 mL raisins

Combine first 6 ingredients. Cream butter and both sugars until fluffy. Beat in eggs, one at a time. Beat in oil. Stir in carrots, apples, pecans and raisins. Blend in flour mixture. Pour batter into a greased and floured bundt pan. Bake until cake tests done, approximately 1 hour. Cool in pan on rack for 10 minutes. Remove from pan and cool completely on rack.

Coca-Cola Cake With Frosting

Temp: 350 deg F         Time: 30-35 minutes

1 cup butter
1/4 cup cocoa
1 cup Coca-Cola
2 cups flour
2 cups sugar
1 tsp soda
1/2 cup buttermilk
2 eggs, beaten
1 tsp vanilla
1-1/2 cups miniature marshmallows

Heat butter, cocoa and Coca-Cola to a boil. Add flour, sugar, and soda; mix gently. Stir in buttermilk, eggs, vanilla and marshmallows. Pour into 9 x 13 inch pan. Bake. Frost with Coca-Cola frosting while cake is still warm.


Coca-Cola Frosting

1/2 cup butter
1/4 cup cocoa
6 Tbsp Coca-Cola
1 cup miniature marshmallows
1 box powdered sugar, sifted
1 tsp vanilla
1 cup nuts

Heat butter, cocoa and Coca-Cola to boiling. Add marshmallows. Stir until melted. Beat in sugar and vanilla. Stir in nuts. Spread over warm cake.

J's Carrot Tube Cake

Temp: 350°F     Time: 45-50 minutes

4 eggs
1-1/2 cups brown sugar
2/3 cup vegetable oil
1 cup all purpose flour
1 cup whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground nutmeg
Pinch salt
2 cups finely grated carrots, packed
3/4 cup drained crushed pineapple
3/4 cup raisins or chopped nuts

1) In a large bowl, beat eggs and sugar with an electric mixer until very light. Beat in oil.

2) In a separate large bowl, combine or sift flours with baking powder, baking soda, cinnamon, nutmeg and salt. Stir flour mixture into egg mixture just until combined. Stir in carrots, pineapple and raisins.

3) Spoon batter into a 10-inch tube pan or bundt pan that has been lightly oiled or sprayed with non-stick cooking spray. Bake until a cake tester comes out clean. Cool for 10 minutes. Remove from pan.

Fluffy Banana Cake

Temp: 350°F     Time: 30-35 minutes

2 large or 3 small bananas
2 cups flour
1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1/2 cup butter or margarine
1-1/2 cups sugar
2 beaten eggs
1 tsp vanilla
1/4 cup buttermilk or sour milk

Mash bananas to measure 1 cup. Set aside.

Stir together flour, baking powder, baking soda and salt. Set aside.

Cream butter and sugar together, add eggs, then vanilla and buttermilk.

Add flour mixture alternatively with mashed bananas. Mix only enough to blend.

Pour batter into a 9 x 13 pan and bake.

Cool. Top with cream cheese icing.

Root Beer Float Cake

Temp: 350oF      Time: 35-40 minutes

1 pkg (18-1/4 oz) white cake mix
1-1/4 cups Root Beer
2 eggs
1/4 cup vegetable oil

In a mixing bowl, combine the first 4 ingredients.  Beat on low speed for 30 seconds, then beat on high for 2 minutes.  Pour into a greased 9 x 13 pan.  Bake until a toothpick inserted comes out clean.  Cool completely on wire rack. 

Frosting

1 packet (3 oz) whipped topping mix
1/2cup chilled Root Beer

In a mixing bowl, beat frosting ingredients until stiff peaks form.  Frost cake.  Chill.

Drew Carey's Apple Coffee Cake

Oven temp: 350 deg c

2 cups flour 500 mL
1-1/2 cups granulated sugar 375 mL
2 teaspoons cinnamon 10 mL
1 teaspoon salt 5 mL
1/2 cup oil 125 mL
2 large eggs
1/4 cup coffee (liquid) 50 mL
1-1/2 teaspoons vanilla extract 7 mL
1-1/2 cups apples, peeled and sliced 625 mL
1 cup chopped nuts 250 mL
Butter or nonstick spray

Grease a Bundt pan with butter or nonstick spray. Mix all other ingredients together in a bowl. Pour mixture into pan. Bake for one hour.

Serves 10 to 12.

Earthquake Cake

Oven Temp: 350 deg F (180 deg C)

In a 9 x 13 pan spread:
2 cups chopped pecans
1 cup shredded coconut

Pour overtop:
1 German chocolate cake mix (prepare as directed)

Beat until creamy:
1-8oz cream cheese
1 stick butter
2 cups icing sugar
1 tsp vanilla

Drop by teasponful over cake. Bake for 40-50 minutes.

N's Zucchini Chocolate Cake

Oven Temp: 350 deg F  Time: 40-45 minutes

2-1/2 cups flour
3/4 cup white sugar
4 heaping tsp cocoa
1 tsp baking soda
1/2 tsp baking powder
1 tsp salt
2 eggs, beaten
1/2 cup butter or margarine, melted
1/2 cup vegetable oil
1/2 cup sour milk (1/2 cup milk + 1-1/2 tsp white vinegar)
1 tsp vanilla
2 cups shredded zuchinni

Mix together and pour into 9 x 13 pan. Sprinkle with 1/2 cup chocolate chips. Bake.
