Unstuffed Cabbage Rolls

2 lbs lean ground beef
1 large onion, diced
1 garlic clove, minced
1 small cabbage, chopped
1 cup rice
2 (14 1/2 ounce) cans diced tomatoes
1 (8 ounce) cans tomato sauce
1/2 cup water
1 teaspoon ground black pepper
1 teaspoon sea salt

In a large skillet or dutch oven, brown the ground beef and onions. Drain.
Add the garlic and cook an additional minute.
Add remaining ingredients.
Bring to a boil, cover, reduce the heat and simmer about 25 minutes or until the cabbage is tender.

Graham Cracker Chocolate Chip Cookies

Temp: 350oF      Time: 8 minutes

1/2 cup butter or margarine
1/2 cup brown sugar
2 tsp vanilla
1 egg
1-1/2 cups graham cracker crumbs
3/4 cup all purpose flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup chocolate chips

Cream the butter and sugar together until creamy. Beat in the vanilla and egg until well combined. In a medium bowl, combine the graham cracker crumbs, flour, baking soda and salt. Gradually add to the butter mixture until just combined. Stir in the chocolate chips. Drop scoops of dough onto a greased cookie sheet (Note: these cookies do not spread while baking). Bake for 8 minutes. Cookies will look slightly underdone, but should set up nicely as they cool.

Chocolate Chip Pudding Cookies

Temp: 375oF      Time: 10-12 minutes

1 cup butter or margarine
1/4 cup white sugar
1/4 cup brown sugar
1-100 g box of pudding, vanilla or chocolate
1 tsp vanilla
2 eggs
2-1/4 cups all purpose flour
1 tsp baking soda
1 cup chocolate chips

Cream the butter and sugars together well with a stand mixer. Add the pudding powder (don't actually make pudding) and the vanilla and beat until creamy. 
Add the eggs and beat until well-incorporated. Gradually add and mix in the flour and baking soda. Stir in chocolate chips. Drop scoops of dough onto greased cookie sheets and bake for 10-12 minutes.

Mom's Carrot Oatmeal Muffins

Preheat oven to 375 deg. F

1 and 1/3 cups flour
1 cup oatmeal
1 tsp. baking powder
1/2 tsp. Baking soda
1 tsp. Cinnamon
1/2 cup brown sugar, packed (I use 1/4 cup)
-----------
3/4 cup finely shredded carrots, packed
1/2 cup raisins
-------------
1/2 cup milk
1 beaten egg
1/3 cup melted butter
1 tsp. vanilla

Grease muffin cups or spray with Pam.
In a large mixing bowl, combine the flour and oatmeal.
Sprinkle the baking powder, baking soda, and cinnamon on top.  Mix them thoroughly.
Add the shredded carrots and raisins.  Mix thoroughly.
In a separate bowl, combine the milk, beaten egg, melted butter, and vanilla.  Stir till well combined.  Add to flour mixture.  Stir just until dry ingredients are moistened.
Fill muffin cups 3/4 full.
Bake at 375 deg. for 20-25 mins.

Rye Bread for the Bread Machine (1.5 lb loaf)

Add ingredients to bread pan in order listed:

1 large egg, at room temperature
Enough water to measure 1-1/4 cups with egg
3 Tbsp oil
3 Tbsp honey
2 Tbsp skim milk powder
1-1/4 tsp salt
1 cup rye flour
1 cup white flour
1-1/4 cup whole wheat flour
1-1/4 tsp bread machine yeast (2 tsp regular yeast)

If baking in the oven, bake at 375 deg F for 30 minutes.

No Bake Chocolate Drop Cookies

Boil 4-5 minutes:
2 cups sugar
1/2 cup butter or margarine
1/2 cup milk
1/4 cup cocoa

Then add:
3 cups oatmeal
1 cup coconut

Drop on wax paper. Cool.

J's Carrot Tube Cake

Temp: 350°F     Time: 45-50 minutes

4 eggs
1-1/2 cups brown sugar
2/3 cup vegetable oil
1 cup all purpose flour
1 cup whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground nutmeg
Pinch salt
2 cups finely grated carrots, packed
3/4 cup drained crushed pineapple
3/4 cup raisins or chopped nuts

1) In a large bowl, beat eggs and sugar with an electric mixer until very light. Beat in oil.

2) In a separate large bowl, combine or sift flours with baking powder, baking soda, cinnamon, nutmeg and salt. Stir flour mixture into egg mixture just until combined. Stir in carrots, pineapple and raisins.

3) Spoon batter into a 10-inch tube pan or bundt pan that has been lightly oiled or sprayed with non-stick cooking spray. Bake until a cake tester comes out clean. Cool for 10 minutes. Remove from pan.

Fluffy Banana Cake

Temp: 350°F     Time: 30-35 minutes

2 large or 3 small bananas
2 cups flour
1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1/2 cup butter or margarine
1-1/2 cups sugar
2 beaten eggs
1 tsp vanilla
1/4 cup buttermilk or sour milk

Mash bananas to measure 1 cup. Set aside.

Stir together flour, baking powder, baking soda and salt. Set aside.

Cream butter and sugar together, add eggs, then vanilla and buttermilk.

Add flour mixture alternatively with mashed bananas. Mix only enough to blend.

Pour batter into a 9 x 13 pan and bake.

Cool. Top with cream cheese icing.

Fruit Platz

Temp: 350°F  Time: 45 minutes

1/2 cup sugar
1/2 cup softened butter or margarine
1 egg
1/4 cup milk
1 tsp vanilla
1 cup flour
1 tsp baking powder
Fresh or frozen fruit, one kind or mixture if preferred

Mix sugar and butter, add egg, milk and vanilla. Add dry ingredients. Spread dough in a greased 9 x 13 pan. Put fruit on top of dough. Spread crumb mixture over fruit and bake.

Crumb mixture:
1 cup flour
1 cup sugar (I use half this amount)
1/4 cup hard butter or margarine

Pumpkin/Zucchini Cookies

Temp: 375oF      Time: 8-10 minutes

1 cup sugar
½ cup shortening
1 cup zuchinni or pumpkin
2 cups flour
1 tsp baking soda
1 tsp baking powder
½ tsp cinnamon
1/8 tsp salt
1 tsp vanilla
1 cup chocolate chips, nuts or raisins

Cream sugar & shortening together well.  Add zuchinni or pumpkin.  Sift flour, baking soda, baking powder, salt and cinnamon together and blend in.  Fold in vanilla & chocolate chips, nuts or raisins.  Drop by teaspoon onto lightly greased pan.  Bake.  Makes 3½-4 dozen cookies.

Apple Cinnamon Granola Bread for the Bread Machine (2 lb loaf)

Add ingredients to bread pan in order listed:

1 cup apple juice, unsweetened            
2/3 cup applesauce, unsweetened       
2 Tbsp shortening                                   
2 Tbsp honey                                 
1 tsp salt                                         
1-1/2 cups whole wheat flour
2 cups white flour
1/2 cup granola
1 tsp cinnamon
1-1/2 tsp yeast
1/4 cup raisins

Oat Pancakes

1-1/2 cups rolled oats 
2 cups milk 
1 cup flour (white or whole wheat) 
2 Tbsp brown or white sugar 
2 Tbsp baking powder 
3/4 tsp salt 
3 eggs 
1/4 cup oil 

Mix oats and milk in small bowl. Set aside until milk is almost absorbed, about 5 minutes. Combine flour, sugar, baking powder and salt in mixing bowl. Stir well to blend. Add eggs and oil to oat mixture. Beat well. Add oat mixture to flour mixture all at once, mixing until smooth. Pour batter by 1/4 cupfuls onto preheated, lightly greased griddle. Bake until fluffy and bubbles break on surface. Turn and bake other side. Serve hot with butter and/or maple syrup. Makes about 18 pancakes.

Mom's Fruit Platz (Coffee Cake)

Base:
1-1/2 cups all-purpose flour
1 Tbsp baking powder
1 tsp sugar
1/2 cup butter
3/4 cup (approx) light cream or whole milk

Spread in a 9 x 9 pan.

Spread 4 cups fruit on top of the base, then sprinkle with crumbs (ruebel).

Ruebel:
1 cup sugar
1/2 cup flour
3 Tbsp butter
2 to 2-1/2 Tbsp cream

Rub in the butter until it makes crumbs. Sprinkle over top the fruit.
Bake at 350 deg F for 30-45 minutes.

Slow Cooker Black Bean Chili

1 lb ground beef
1 medium onion, chopped
16 oz jar thick salsa
15 oz can black beans, rinsed and drained
1/2 cup chicken broth
1 medium red bell pepper, chopped
1 tsp ground cumin
2-3 tsp chili powder
1 to 1.5 tsp dried oregano

1. Brown ground beef and onion in skillet. Drain.
2. Combine all ingredients in slow cooker.
3. Cover. Cook on low 8-10 hours or high 3-6 hours.
4. When serving, add sour cream and guacamole if desired.

Ham Lentil Soup for the Slow Cooker

1 meaty ham bone
5 cups water
Cooked ham or bacon
2 cups red lentils
3 carrots, sliced or diced
1 cup green peas
1 cup corn
1/2 cup celery, chopped
1/2 cup onion, chopped
1/4 tsp pepper
1 tsp parsley flakes
1/4 tsp thyme

1. Put ham bone and water in slow cooker. Cover. turn on low for 6-8 hours. Remove ham bone and pull the remaining meat off. Strain water in slow cooker to ensure there are no small pieces of bone left. Return broth to slow cooker, add the pieces of meat, plus as much extra ham or bacon as desired.

2. Add remaining ingredients. Cover. cook on low for 8-10 hours or high for 4-6 hours.

Hamburger Lentil Soup for the Slow Cooker

1 lb ground beef
1/2 cup onions, chopped
4 carrots, diced
2 ribs celery, diced
1 garlic clove, minced or 1 tsp garlic powder
1 can tomato soup
2 tsp salt
2 cups dry lentils, washed with stones removed
1 quart water
1/2 tsp dried marjoram or thyme
1 Tbsp brown sugar

1. Brown ground beef and onions in skillet. Drain.
2. Combine all ingredients in slow cooker.
3. Cover. Cook on low 8-10 hours or high 4-6 hours.

Mom's Meatbuns

Meatbun Dough for the bread machine:

1/2 Tbsp yeast
2-1/3 Tbsp sugar
3/4 cup water
1/2 cup mashed potatoes
1/4 cup butter or shortening
3-1/2 to 3-3/4 cups flour
1 egg
3/4 tsp salt

Filling:
Fry onions and garlic. Then take either beef broth thickened with flour and water or 1 can gravy (284 mL) and add to ground cooked roast or cooked ground meat. Mix together.

To form buns:
Pinch off balls of dough about the size of a small egg.
Flatten dough in the palm of your hand into about a 3-inch circle.
Place a spoonful of filling on the centre.
Bring the edges of the dough up and around the filling and pinch together tightly to seal edges.
Place pinched side down on a greased baking sheet.
Cover and allow to rise in a warm place.
Bake at 375 deg F for about 20 minutes or until golden.

Chocolate Covered Almond Bars

Temp 350 F    

In a mixing bowl combine: 
2 cups all-purpose flour
2 cups rolled oats
1 cup packed brown sugar
1 tsp baking soda

Add 1 cup melted butter. Mix well. Reserve 1 cup of crumbly mixture. Press remainder in a 9" x 13" cake pan.

Bake at 350 deg F for 12-15 minutes or until lightly browned.

Sprinkle 1 pkg (225g) chocolate caramels and 1 cup slivered almonds over crust.

Mix 1 can (284 mL) butterscotch syrup and 1/3 cup all purpose flour. Pour evenly over crust. Sprinkle reserved crumbly mixture on top.

Bake 20-25 minutes longer or until golden. Cool completely. Cut into bars.

New Years Cookies

Warm up 2 cups milk and put in a large bowl.

Add:
1/2 tsp salt
3 Tbsp sugar
1/2 cup water
2 eggs

Mix.

Add:
1/4 cup oil
2 cups flour
1 heaping Tbsp quick-rise yeast

Mix.

Add:
2 cups raisins
3 cups flour

Let rise until it doubles in size.
Fry in hot fat by tablespoon.

Serve with Rogers syrup, honey or icing sugar.
