Egg Vegetable Muffins

6 large eggs, beaten
2 egg whites 
2 cups cooked, chopped mixed veggies
1/4 tsp salt
1/4 tsp pepper
1 Tbsp oil
1/2 cup shredded cheese

Mix together and pour into a well greased 12-cup muffin tin.
Bake at 350 deg C for 25 minutes.
