Homemade Chocolate & Vanilla Pudding Mix

Chocolate

3/4 cup powdered milk
7/8 cup cornstarch, 1 cup minus 2 Tbsp
1-1/2 cup sugar
3/4 cup cocoa powder
1/4 tsp salt, rounded

Combine all the dry ingredients and store in an airtight container. 
The mix fits in a quart jar.

To prepare:
Add 2/3 cup mix to a saucepan.
Add 2 cups milk and stir until blended.
Bring to a boil, reduce heat and simmer while stirring constantly until thickened.
Cool and serve.

Vanilla

1-1/4 cup powdered milk
1-1/4 cup cornstarch
1-5/8 cup sugar
1/4 cup ground nutmeg
3/8 tsp salt

Combine all the dry ingredients and store in an airtight container. 
The mix fits in a quart jar.

To prepare:
Add 1/2 cup mix to a saucepan.
Add 2 cups milk and stir until blended.
Bring to a boil, reduce heat and simmer while stirring constantly until thickened.
Remove from heat and add 1/2 tsp vanilla extract.
Cool and serve.

Butter Swim Cinnamon Roll Biscuit Cake

Mix together:

2.5 cups flour
¼ cup brown sugar (or less than ¼ cup honey)
1 Tbsp baking powder
1.5 Tbsp cinnamon

Then add:

2 cups milk or cream
1 tsp vanilla
¾ cup raisins

Melt 1/8 cup butter in an 9x9 baking dish.

Drop dough on top of butter and spread around.

Bake at 450 deg F for 25 minutes.

Optional Icing

Mix together:

1.5 cups icing sugar
3 Tbsp melted butter
1 tsp vanilla
2 Tbsp heavy cream

Saskatoon-Rhubarb Jam Without Pectin

2 cups chopped rhubarb
3 cups Saskatoons
1/2 cup sugar

Cook together in a pot on stovetop.
Let cool.
Blend and store in jars in fridge/freezer.

1 Tbsp lemon juice
1/4 cup sugar

Squash/Peanut Butter Cookies

1/2 cup cooked squash (or sweet potato)
1/2 cup natural peanut butter
1/4 cup unsweetened cocoa
1/4 cup honey
1/4 cup chocolate chips

Mix ingredients in order given.

Shape into cookies and place on cookie sheet lined with parchment paper. 

Bake at 350 deg F for 12-15 minutes.

Let cool completely or they will fall apart.

Perogy and Sausage Casserole

Boil 25 perogies.
Chop up 4 smokies.
Place in a greased casserole dish.

Mix together:
1 can cream of mushroom soup
1 cup milk

Pour overtop the perogies and smokies.
Cover with shredded cheese.

Bake at 350 deg F for 30-35 minutes.

Homemade Turtles

3 tablespoons salted butter
1/8 cup light brown sugar, packed
1/8 cup granulated sugar
1/8 cup sweetened condensed milk (homemade)
1/8 cup Rogers syrup
1/4 tsp vanilla extract
1 cup pecan halves, roasted for 10 minutes @ 350 and coarsely chopped.
3 oz or 12 squares Baker's chocolate

Melt the butter in a microwave safe bowl. Add sugars, condensed milk, syrup. Microwave for 2 minutes. Add vanilla and pecans.

Drop by teaspoonfuls onto parchment paper. Cool in fridge for 10-20 minutes.

Melt chocolate in microwave - 30 seconds at a time, stirring in between. Dip turtles in chocolate to cover. Put back on parchment to cool and harden.
