Bubbat (Mennonite Chicken Dressing)

1 cup flour
1.5 tsp baking powder
1/2 tsp salt
2 Tbsp shortening, melted
1 egg
1/3 cup milk
1 cup raisins
2 Tbsp sugar, if desired

Mix dry ingredients; add beaten egg, shortening and milk. Mix well and add raisins. Bake in 350 deg F oven for 20 minutes or use as a filling in chicken or turkey.

Apple Pecan Carrot Cake

Oven temp: 350 F

500 mL flour
10 mL   cinnamon
7 mL     baking soda
1 mL     nutmeg
2 mL     cloves
2 mL     salt
125 mL butter or margarine
250 mL white sugar
250 mL brown sugar
4          eggs
125 mL oil
450 mL shredded carrots
500 mL chopped apples
250 mL chopped pecans
125 mL raisins

Combine first 6 ingredients. Cream butter and both sugars until fluffy. Beat in eggs, one at a time. Beat in oil. Stir in carrots, apples, pecans and raisins. Blend in flour mixture. Pour batter into a greased and floured bundt pan. Bake until cake tests done, approximately 1 hour. Cool in pan on rack for 10 minutes. Remove from pan and cool completely on rack.

Chicken Burrito Bowls

1 Tbsp olive oil
2 chicken breasts
1 tsp chili powder
1 tsp garlic powder
1 tsp cumin
1/2 cup black beans
3 cups diced orange bell pepper (or, do one of each - green, orange, red)
1 cup diced tomato
1/2 cup frozen corn, thawed
1/2 cup green onions
1/2 cup cheese
1 cup cooked brown rice
Greek yogurt for topping
Cilantro for garnish

Slice chicken breasts in half length wise to give you four thin breasts, this will cook much faster.
Combine chili powder, garlic powder and cumin together. Rub on the chicken breasts.
Heat oil in pan over medium high heat. Cook chicken breasts about 4-5 minutes on each side or until cooked through.
Cut chicken in to bite size pieces, set aside.
Warm black beans on the stove top.
Divide the rice, beans, chicken and remaining ingredients in to 4 bowls. Top with plain Greek yogurt, cheese and cilantro.

Double Chocolate Drop Cookies

1/2 cup shortening
1 cup sugar
1 egg
3/4 cup sour milk (add a capful of vinegar to milk)
1/2 tsp baking soda
1/2 tsp salt
1/2 cup cocoa
1-3/4 cups flour
1 pkg chocolate chips, plain or mint

Preheat oven to 400 deg F.
Cream shortening, sugar and egg. 
Add milk, then dry ingredients. 
Blend in chocolate chips.
Drop by teaspoonful on to cookie sheet.
Bake for 8-10 minutes. Do not over cook!

Zucchini Chocolate Chip Bread


Ingredients:

1 cup all purpose flour
½ cup whole wheat flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
1 large egg
½ cup canola oil
½ cup light brown sugar, packed
½ cup plain Greek yogurt
1 teaspoon vanilla extract
1 cup zucchini, shredded (if using frozen, drain thawed zucchini)
1 cup chocolate chips (semi-sweet or dark)
Optional: Add raisins, dried cranberries, sunflower seeds, pumpkin seeds

1. Preheat the oven to 350°F (180°C) and grease a loaf pan. Set aside.
2. In a large bowl mix together the flour, baking soda, baking powder, salt, cinnamon and nutmeg.
3. In a separate bowl, whisk the egg, oil, both sugars, Greek yogurt and vanilla extract until combined.
4. Add the wet ingredients to the dry ingredients and fold gently. Do not over mix.
5. Fold in the zucchini and chocolate chips.
6. Pour the batter into the prepared pan and bake for 40-50 minutes or until a toothpick comes out clean.
7. Remove from the oven and let cool in the pan for about 20 minutes. Transfer to a wire rack to cool completely.

M's Rollkuchen

4 eggs
3/4 cup sour cream
3/4 cup whipping cream (I have used 18% cream as well and it works)
4 cups flour
2 tsp sugar (2 Tbsp if you want them sweeter)
4 tsp baking powder
1 tsp salt

Beat eggs, add sour cream and whipping cream. Mix well. Add dry ingredients slowly, mix well. Let dough stand for 1 hour. Roll out dough very thin, cut in either strips or squares. Fry in hot oil.
